Café Divine is partnering with the Refugee Collective Farm in Elgin, TX to bring fresh organic eggs to St. David's! This wonderful organization uses and teaches sustainable farming techniques and is dedicated to connecting refugees to fair-wage work. The farm provides our Sunday Community Supported Agriculture (CSA) vegetables.
The eggs will be in the to-go freezer in Sumners Hall. Pick some up when having a meal at church.
- Sunday Breakfast: 8:30-11:30 a.m.
- Wednesday Dinner: 5:30-6:30 p.m.
- Thursday Public Lunch: 1st and 3rd Thursdays, 11:30-1 p.m.
Someone recently told me they can get eggs cheaper at HEB, which is most likely true. I replied, "Yes, but these eggs are organic, from free-range chickens from the Refugee Farm Collective. Their mission at the collective is different than the farmers who raise 10,000 chickens at a time."
Avian Bird Flu has become an issue at large-scale farms, and I have seen the impact on production and prices. I understand it takes more than a year for birds to lay eggs, and even the replacement birds have been affected by illness. So, the increase in egg prices isn't going away anytime soon. Café Divine uses about 360 eggs a week, and considering the market-wide price increase, I plan to change a few things to limit how many eggs we use. My shell eggs were $.63 a piece last week, and liquid eggs (with citric acid to preserve) were $.23. The week before, shell eggs were $.54. $.83 is a good fair price for these eggs.

More simply put, these are local organic eggs, raised down the road by a collective of people who are creating opportunity, helping their neighbors, producing a great product, and having fun while doing it. They are my kind of eggs!
